When it comes to celebrating in style, you can’t go wrong with a Champagne cocktail. Anything that involves a bit of bubbly is always a sure-fire party starter, so we thought we’d create the perfect festive fizz for the holidays. A spin on the classic ‘French 75’, our Madam Christmas 75 is just as elegant, tangy and crisp, with a bubbly mouthfeel, but it’s our fruity, festive twist that makes it a real Christmas cracker.

For our Eccentric homage, we’ve swapped out the traditional simple syrup for the sweet-yet-tart freshness of cranberry juice. Not only does it imbue a delicate fruity flavour it also adds a perfectly pretty, festive blush. The sharp, zesty flavour of freshly squeezed lemon that’s a staple of the original French 75 is the reason this style of cocktail works so well with our citrus forward Madam Geneva gin. Our marvellously mercurial Madam also boasts heady botanical notes of angelica and wild sunflower which add even more depth to the overall flavour profile.

It’s a recipe that works exceptionally well with aromatic herb garnishes – we’ve gone with rosemary for this recipe, but the floral earthiness of thyme is just as delicious.

Recipe

20ml Eccentric Madam Geneva Gin

15ml Cranberry Juice

10ml Lemon Juice

Champagne

Rosemary Garnish

Method

Gently does it with this effervescent beauty. First, pour the measures of gin, cranberry & lemon juice into a Champagne flute and stir with a barspoon. Then carefully top the mixture with chilled Champagne, add a small sprig of rosemary to garnish and there you have it – the perfect cocktail for greeting guests.

(Top tip: when adding herbs to your drinks, clap them between your palms to release the flavours and aromas before popping them into the glass.)
