We’ve just spent a few days with Melissa running this Western through our new system. Our ‘Blue Ginger’ gin is the most eccentric yet with Juniper and Bergamot on the nose. The palate is clean and fresh with Thai Blue Ginger, Lemongrass and Galangal taking the starring roles. The finish is dry and crisp with peppery Juniper and Wild Sunflower Root. The gin takes on a wonderful hue of rosy pink due to being barrel rested for 7 days in french red wine casks. Yep it’s PINK!

We recommend trying this one with a touch of Peter Spanton’s Lemongrass Tonic or served martini style to showcase the exotic flavours.
