Who doesn’t love a no-messing, juniper forward gin with a crisp citrus tang to freshen the palate? A cool dry gin cocktail

We’ve had bags of fun experimenting with this gin – a favourite creation we want to share is our Cucumber Southside. Refreshing, cool and dangerously good drinking, it’s definitely one for mojito-loving gin connoisseurs. The freshness of the cucumber, lime and mint coupled with the subtle botanicals and zesty citrus of the Cardiff Dry are a match made in heaven.

Cucumber Southside- single serving

Ingredients

  • 50ml Eccentric Cardiff Dry Gin 
  • 25ml Fresh Lime Juice
  • 15ml Simple Syrup (recipe below)
  • 6 Leaves Fresh Mint 
  • 2 Slices Fresh Cucumber
  • Soda Water
  • Cucumber & Mint Garnish


Method

Take your favourite highball glass and fill with ice. Add the mint leaves and cucumber slices to a cocktail shaker and muddle to release the flavours. Next, pour in the Cardiff Dry Gin, simple syrup, lime juice and some ice and give everything a good shake. Strain the mixture into the highball glass, top with soda water to taste and garnish with more cucumber and mint.

Our very simple Simple Syrup recipe

A good cocktail is all about getting the flavour balance right and the right touch of sweetness is all part of the alchemy. Lots of cocktails use a simple syrup to do this, so it’s handy to know how to make a good one. We favour a 2:1 ratio of sugar to water which keeps well in an airtight container in the fridge.

To make the syrup, just add 150ml of water and 300ml of sugar to a small saucepan and warm gently over a low heat, stirring occasionally until the sugar has completely dissolved. Leave to cool, then  bottle and store in the fridge.
